Tempeh Meatballs (Great Balls of Tempeh)
These are the absolute BEST and a crowd-pleaser - worth the effort!
Ingredients
- 8 oz cake of Tootie’s Tempeh
- 1 cup water
- 2 TBSP tamari
- 2 TBSP Ketchup
- ½ tsp mustard
- ½ tsp oregano
- ½ tsp thyme
- Salt & pepper
- ⅓ cup finely diced onion
- 1 large clove garlic (or powder equivalent)
- ½ cup bread crumbs
- ¼ cup finely chopped nuts (walnuts or pine nuts) optional
- Olive oil for cooking
Instructions
- Crumble the tempeh with your hands, then boil it in the water and tamari for 10 min, drain well, let cool. When cooled, put tempeh in bowl and add all the rest of the ingredients. Mix them together well, then form the meatballs with your hands - and don’t be shy about forming them by packing them hard - helps to keep them together. Coat a pan in olive oil and place the balls in one at a time coating them in the oil, and saute till browned, rotating them so they cook evenly. Alternatively, you can bake them in the oven at 375°F for 20 minutes or so, turning at least once. Serve however you like - on top of spaghetti or stand-alone. Enjoy!
