Tempeh scramble

Matt is sharing a tempeh scramble recipe packed with protein and veggies. Happy cooking 💫

Ingredients

  • Tempeh Scramble
  • 2 tablespoons olive oil
  • (1) 8oz packages of Traditional Tootie’s Tempeh
  • 1 teaspoon turmeric
  • ½ teaspoon paprika
  • ¼ cup roughly chopped onion
  • 4-6 oz frozen chopped spinach
  • 6 cherry or grape tomatoes, halved
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha
  • 1 tablespoon lemon juice
  • ½ teaspoon ground black pepper
  • 1 tablespoon nutritional yeast
  • 1 pinch of salt

Instructions

  1. Preheat the pan to medium-high heat. Add two tablespoons of oil and then crumble the tempeh into the pan (small pieces are okay)
  2. Brown the tempeh for 6 minutes, turning occasionally
  3. Add the onions and sauté for 4 minutes, turning frequently
  4. Add the turmeric and paprika; incorporate the spices with the tempeh and toast them for 1 minute
  5. Add the spinach, tomatoes, soy sauce, sriracha and lemon juice and sauté, stirring occasionally, for 5 minutes
  6. Turn the heat off and stir in the nutritional yeast, black pepper and a pinch of salt
