Tempeh scramble
Matt is sharing a tempeh scramble recipe packed with protein and veggies. Happy cooking 💫
Ingredients
- Tempeh Scramble
- 2 tablespoons olive oil
- (1) 8oz packages of Traditional Tootie’s Tempeh
- 1 teaspoon turmeric
- ½ teaspoon paprika
- ¼ cup roughly chopped onion
- 4-6 oz frozen chopped spinach
- 6 cherry or grape tomatoes, halved
- 1 tablespoon soy sauce
- 1 teaspoon sriracha
- 1 tablespoon lemon juice
- ½ teaspoon ground black pepper
- 1 tablespoon nutritional yeast
- 1 pinch of salt
Instructions
- Preheat the pan to medium-high heat. Add two tablespoons of oil and then crumble the tempeh into the pan (small pieces are okay)
- Brown the tempeh for 6 minutes, turning occasionally
- Add the onions and sauté for 4 minutes, turning frequently
- Add the turmeric and paprika; incorporate the spices with the tempeh and toast them for 1 minute
- Add the spinach, tomatoes, soy sauce, sriracha and lemon juice and sauté, stirring occasionally, for 5 minutes
- Turn the heat off and stir in the nutritional yeast, black pepper and a pinch of salt
