Tempeh Tacos
There are so many ways to make tacos and this is one of our favorites!
Tempeh Tacos
So many wonderful fresh veggies in this delish tempeh taco recipe!
Ingredients
for the filling:
- 16 oz (2 packages) Tootie’s Tempeh
- 1 TBSP olive oil
- 1 onion, diced
- 3 TBSP your favorite taco seasoning
- ½ cup Pico de Gallo
- ½ cup water
- Salt & pepper
for the corn avocado salsa:
- 1 ear of corn
- 1 half avocado, cubed
- 1 half red onion, thinly sliced
- ½ cup chopped cilantro
- Juice of one lime
- 1 TBSP olive oil
- Salt & pepper
for the garnish:
- Red cabbage, thinly sliced
- Fresh jalapeño slices
- Lime wedges
Instructions
- In a skillet add 1 tbsp olive oil. Sauté onions till aromatic.
- Crumble tempeh and add to onions and sauté for 5-8 minutes.
- Add 1/2 cup water, seasonings, salt and pico de gallo. Sauté for another 5-10 minutes. Set aside.
- Shave 1 ear of corn and add avocado, cilantro, onion, lime juice and oil to make the salsa.
- Assemble the tacos into soft corn tortillas with tempeh sauté on bottom, corn salsa, then the garnish.
