Spicy Tempeh Wrap
Happy #TempehTuesday! With summer just weeks away here is a great picnic, lunch or dinner wrap dripping with taste and loaded with tempeh's superfood protein and nutrients! Spicy Tempeh Wrap
Ingredients
- 8oz Tootie’s Tempeh, cut into cubes
- ⅓ cup shelled edamame
- 1 cup guacamole
- ½ cup halved cherry tomatoes
- 1 cup shredded Napa cabbage
- 1 cup spring greens/lettuces
- Pickled red onions
- ½ cup your favorite hot sauce (Franks was used here)
- 2 extra large wraps
- Chipotle Aioli
- 1 large chipotle pepper in adobo sauce, minced
- ½ cup vegan mayonnaise
- 1 clove roasted garlic
- 1 tsp lime juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix together all the aioli ingredients. Stir to combine. Set aside.
- In a medium skillet, heat 1-2 tbsp avocado oil. Place tempeh in pan, season with salt to taste. Sear on both sides until deep golden brown. Remove from heat and pour hot sauce over tempeh. Stir to coat evenly. Set aside to cool slightly.
- Spread about 2-3 tbsp of the aioli in the center of the wrap. Spoon 2 large spoonfuls of guacamole on top of the aioli. Arrange the cherry tomatoes, Napa cabbage, spring greens and pickled onions on top of the aioli and guacamole. Top with the spicy tempeh and wrap up tightly.
- Cut in half and enjoy with a fresh glass of lemonade!
