Spicy Chili Garlic Asparagus With Tempeh
It’s TempehTuesday!! Today We are happy to share a recipe from our intern Sara Tran who created a delicious Spicy Chili Garlic Asparagus With Tempeh
Ingredients
- 8 oz Tootie’s Tempeh
- 1 tablespoon neutral oil like avocado or olive oil
- ¾ lb. asparagus spears, cut into 2” pieces
- 2 medium garlic cloves, minced
- 1-inch piece of ginger, peeled and minced ( about 1 tablespoon) - ( optional, I don’t like ginger so I won’t add in but if you like ginger, feel free to add in)
- 2 tablespoons soy sauce
- Chili garlic sauce
- 1 tablespoon sesame oil
- 1 tablespoon lime juice ( *lemon also works)
- Scallions for serving.
Instructions
- Using your hands, crumble the tempeh into chickpea-sized bits. Place all the crumble tempeh into a skillet with the avocado oil and the peppers, raise the heat to medium-high, and cook until the tempeh is golden and the peppers are just starting to soften, about 3–5 minutes.
- Heat the remaining half of the sesame oil in the same pan. Add garlic, asparagus. Stir-fry until asparagus is just tender (3 minutes).
- Meanwhile, in a medium bowl, add the garlic, 2 tablespoons of soy sauce, 1 tablespoon of chili garlic sauce, sesame oil, and lime juice.
- Add the sauce in the pan and toss it all together.
- Garnish with scallions. Enjoy ! Chúc Ngon Miệng !!
